A new animal-free egg white is made available in the U.S. market and now one of the inital products made from this egg white substitute reached the market. The new unique macaroons are the first ever product made from egg white protein derived from a new type of engineered yeast, which is intended to be identical to the egg white protein in chicken eggs.
A food technology company named the Every Company is working on creating real animal-free proteins with the use of precision fermentation methods. The method involves breaking down of specific animal products like eggs and milk to their molecular components and further produce these components using microorganisms. For past few years, the company was focused on producing chicken-free egg whites with this method. As reported by the company, the new product made from egg white substitute works exactly similar to an egg white of a chicken egg. It can whip, aerate and bake in similar ways to conventional egg whites. The company in partnership with a bakery based in San Francisco, Chantal Guillon launched the product in a line of Macaroons. The company developed two products before the new chicken-free egg white, as this is the third product that is animal-free introduced by the company. The first product of the company was introduced in 2021, which was an animal-free pepsin.
There are other companies that are exploring the precision fermentation to develop egg white proteins. A group of scientists from University of Finland successfully produced ovalbumin made from engineered fungus. According to the scientists using this method to manufacture egg white proteins could help to reduce emission of greenhouse gas by half than the environmental impact of chicken farming methods used currently.
